Sometimes we the best lessons are those we haven't prepared for. I did one
last week where I was going to have people describe pictures of people from
magazines. I carefully cut lots of pictures out of a magazine and laminated
them to neutral colored paper, cut them out, and had them ready to use (I
thought). Come the day of the lesson and I can't find the pictures at all.
So -- quick change of plans -- the students find pictures in magazines
(which I always keep in my classroom) and cut them out, paste them to a
piece of notebook paper, and write their descriptions there. Then they
bring those to the front of the room, and present them to the class.

It actually worked better than what I had been planning, because it allowed
for more hands-on activity from them.

Mind you, preparation is necessary, but I often find that it really is that
"jumping-off place" that we've mentioned for curricula. I did start that
lesson with the Picture Dictionary vocabulary, going over pronunciation,
etc., but didn't end it there.
