Denise,
If this is a school-wide event, get each classroom teacher to demonstrate
some skills that they are teaching to children that parents can reinforce.  
A second grade teacher, that I know, used the book Freckle Juice to
demonstrate Literature Circles so parents would be familiar with the terms
their children used.  She also used this book to demonstrate graphic
organizers.  The parents really got excited about story mapping to help with
comprehension.  Other teachers shared read aloud strategies.  However, the
real key to participation was having parents try the techniques and discuss
how and why they should use them with their children.

It is also important that your Family Literacy Night not be a one time
event.
