You were looking for theories on health and literacy. You could check
a document called the "Health and Literacy Compendium", which lists
materials related to health and literacy. It is available online at:

http://easternlincs.worlded.org/docs/comp/index.html

There is a section called "Background Materials", which may have
something that could help you. Each listing has a description of the
material, and I know that many of them talk about the connection
between health and literacy. They are generally more practical than
theoretical, but you may find something. You can also order a hard
copy of the "Health and Literacy Compendium" from me at Worl Education
(it's free).
