The information clearinghouses of the National Institutes of Diabetes and
Digestive and Kidney Diseases (NIDDK), one of the National Institutes of
Health, produce patient education materials that are easy-to-read.  Most of
these publications are available online at the following website addresses:

Dear Health Literacy Listserv Members:

I am putting together a list of basic nutrition education materials that are
appropriate for audiences with limited literacy skills.  Ideally materials
will read at or below the 6th grade level (of course piloting with specific
audiences would be needed but this could serve as a starting point for
educators).  Do you know of such a list already in existence or other
materials that fit this description?  Photonovellas, pictographs, and
easy-to-read brochures, pamphlets, etc.?  Topics falling under basic
nutrition may include the Food Guide Pyramid, eating less fat, shopping,
cooking, etc.

I appreciate any assistance that you can provide on this topic.
