The goal is to integrate work readiness, culinary vocational skills and ABE (reading, writing, math) skills for older youth between the ages of 16 - 21. Most of the classroom material used by the local Voc. Tech schools are geared for the 9 - 12 reading level. We are hoping to locate curriculum materials and lesson plans for the pre-GED levels (5 - 8) on such topics as... *** overview of the food service / Hospitality industry *** safety, sanitation and personal hygiene *** basic cooking principles and methods *** planning meals and nutrition *** weights and measures If any of you fine members of this listserv are familiar with such materials or know of another ABE-WorkPlace program that has attempted a similar project focused on food service and culinary arts .... we sure could use the help.
